Eggplant Rolls
Ingredients
1 medium eggplants
extra-virgin olive oil - 2-3 tablespoons
salt - to taste
light cream cheese - 100 g
garlic - to taste
2 medium tomatoes
Instructionts:
Cut the eggplants lengthwise into thin slices.
Brush the eggplant slices with olive oil on both sides and fry till brown in a frying pan, sprinkle with salt.
In a small bowl mix cream cheese, garlic. Season to taste with salt and black pepper.
Remove eggplants from frying pan and leave to cool on a wire rack.
To assemble the rolls spread the filling evenly on each slice, place one tomato slice and roll tightly.
