Moussaka in small Pan or You can use deep ovenproof dish for 4 people
Ingredients
-4 medium-sized potatoes
-3 tbsp olive oil, plus extra for brushing
-1 red onion, sliced
-500g lamb mince
-2 garlic cloves, crushed
-1 tsp mixed spice
-500g passata
-2 aubergines, cut into slices
-300ml crème fraîche
-140g cheddar, grated
-sauce pesto (optional)
-salsa(optional)
Preparation:
1.Boil the potatoes whole for 20 mins or just until tender. Drain and allow to cool.
2.Return the pan to the heat and add 2 tbsp olive oil and the onion.Cook until softened, then add the lamb.
2.Fry the mince for 5 mins or until cooked through and starting to char.Add the garlic and spice, and stir in the passata.Bring to a simmer, then season to taste, take off the heat and set aside until needed.
3.Heat oven to 200C.
4.Warm a griddle pan over a high heat and brush a little oil over the aubergines.Grill for 2-3 mins each side or until char lines appear.
5.Once cool enough to handle, cut the boiled potatoes into thick slices.
6.Put 1 tbsp oil in the base of an ovenproof dish and start with a layer of potatoes, then aubergines, a sprinkling of seasoning, then a layer of the lamb mixture.
7.Repeat until all the mixture is used up, ending with a layer of aubergines.
8.Spread the crème fraîche over the top and scatter with the cheese.
9.Put in the oven for 10 mins or until the cheese is golden.
10.Add crème fraîche over the top,sauce pesto and salsa.
Garlic Parmesan Shrimp Pasta
Ingredients:
-300 g fettuccine pasta
-200 g medium shrimp, peeled and deveined
-100 g unsalted butter
-2 cloves garlic, minced
-1 cup cherry tomatoes
-1/2 teaspoon dried oregano
-1 cup heavy cream
1/4 cup freshly grated Parmesan
-1,5 tablespoons chopped fresh parsley leaves
-black pepper
-salt
Preparation:
1.In a large pot of boiling salted water, cook pasta according to package instructions.
2.Cut tomatoes on a half.
3.Season shrimp with salt and pepper, to taste,set aside.
4.Melt 50 g butter in a large skillet over medium high heat. Add garlic and cook, stirring frequently, until brown, about 1-2 minutes.
5.Add shrimp and cook about 2-3 minutes; set aside.
6.Melt remaining 50 g tablespoons butter in the skillet add cream. Stir in pasta and shrimps add parmesan,salt and pepper.
7.Serve immediately, garnished with parsley.
Gyoza
Ingredients:
1 (10 ounce) package wonton wrappers
1 tablespoon sesame oil
2 cups chopped cabbage
1/4 cup chopped onion
1 clove garlic, chopped
1/4 cup chopped carrot
1/2 pound ground chicken
1 egg
1 tablespoon vegetable oil
1/4 cup water
1/4 cup soy sauce
2 tablespoons rice vinegar
Preparation:
1.Heat sesame oil in a large skillet over medium high heat. Mix in cabbage, onion, garlic and carrot. Cook and stir until cabbage is limp. Mix in chicken and egg. Cook until chicken is evenly brown and egg is no longer runny.
2.Preheat vegetable oil in a large skillet over medium high heat.
3.Place approximately 1 tablespoon of the cabbage and chicken mixture in the center of each wrapper. Fold wrappers in half over filling, and seal edges with moistened fingers.
4.In the preheated vegetable oil, cook gyoza approximately 1 minute per side, until lightly browned. Place water into skillet and reduce heat. Cover and allow gyoza to steam until the water is gone.
5.In a small bowl, mix soy sauce and rice vinegar. Use the mixture as a dipping sauce for the finished wrappers.
Schnitzel
Ingredients:

-1/2 cup all-purpose flour

-3 large eggs
-1 cup breadcrumbs

Preparation:
* Pound meat of choice pork, veal or chicken
* Place the meat chops between two sheets of plastic wrap and pound them with the flat side of a meat tenderizer.
* Sprinkle with salt and pepper.
* Coat in flour, dredge in egg, coat in panko breadcrumbs.
* Fry until golden around 4 minutes each sides.

Tagliatelle with Seafood
Ingredients:
-1 package linguine pasta
-1 tablespoon olive oil
-4 cloves garlic, minced
-1 small red onion, mincem
-1 tablespoon olive oil
-2 tomatoes, seeded and diced
-3 green onions, chopped
-1 crushed tomato
-1 tablespoon tomato paste
-1 teaspoon dried oregano
-1 teaspoon ground thyme
-2 pounds mussels, cleaned and debearded
-1 pound uncooked medium shrimp, peeled and deveined
-1 cup dry white wine
-2 teaspoons lemon juice
-1 lemon - cut into wedges, for garnish
Instructions:
1.Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the linguine, and return to a boil. Cook the pasta about 11 minutes. Drain well in a colander set in the sink.
2.Heat 1 tablespoon of olive oil in a skillet over medium heat. Stir in the garlic and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
3.Heat another tablespoon of olive oil in a large skillet over medium-low heat.
4.Stir in diced tomatoes and green onion; cook and stir until the tomatoes have softened.
5.Stir onion mixture into the tomatoes, then add crushed tomatoes, tomato paste, oregano, and thyme. Simmer for 5 minutes.
6.Stir in mussels and shrimp, then pour in the wine and lemon juice.
7.Cover and increase heat to high.
8.Cook until shrimp have turned pink and mussels have opened, discarding any that have not opened. Serve over pasta and garnish with lemon wedges.

Pasta with mushrooms
Ingredients:

800g mushrooms

4 tbsp olive oil
-
2 garlic cloves, peeled and finely chopped

Salt and black pepper

300 ml cream

450g dried long pasta (ideally pappardelle or tagliatelle)

Parmesan, grated
Instructions:
1. Cut the cleaned mushrooms into slices; not too thin.
2 In a large frying pan, heat the oil and butter, add the garlic and fry for a few minutes. Add the fresh mushrooms. Sprinkle with salt and pepper and cook, stirring occasionally, for 5–6 minutes, or until the mushrooms have released their water and are tender and glistening.
3 Put a large pan of well-salted water on to boil in preparation for cooking the pasta. Meanwhile, cook the pasta until al dente.
4. Drain and toss with the mushrooms and add cream. Divide between bowls and serve, passing around grated cheese.

Directions:

Fry up pork with flour and eggs on the metalic frying pan . Around 4 minutes of each side.

Lay out the small chunks of meat on a baking tray.

Profusely cover it with mayonnaise using a tablespoon or a cooking brush.

Cover the pork with sliced tomatoes

Grate the hard cheese and sprinkle it over the meat.

Bake the dish at a temperature of 180-200 C about 15 minutes. You can tell if the dish is ready by the top layer of cheese. If the crust is golden, then the French-style Meat is ready.
Salad

Preheat the oven to 180 degrees.

Cut the potatoes into parts.

In a large bowl, toss the potatoes with the oil and spices.

Original Carbonara Recipe
Ingredients:
-2 teaspoons olive oil
-200 gr guanciale (cured pork cheek)
-400 gr spaghetti
-3 eggs
-10 tablespoons grated pecorino Romano cheese
-salt to taste
-ground black pepper to taste
Preparation:
1.) Heat olive oil in a large skillet over medium heat and add guanciale . Cook until browned and crispy around 5 to 10 minutes.
2.) Cook spaghetti in the boiling salted water, about 8 minutes. Drain and return to the pot.
3.) Whisk eggs, 5 tablespoons pecorino Romano cheese, and some black pepper in a bowl until smooth and creamy. Pour egg mixture over pasta, stirring quickly, until creamy and slightly cooled. Stir in guanciale. Top with remaining 5 tablespoons pecorino Romano cheese and more ground black pepper.
Milanese Saffron Risotto
Ingredients
-1.2 litres chicken stock
-2 tbsp butter
-1 tbsp olive oil
-1 onion, very finely chopped
-350g arborio risotto rice
-125ml Fino sherry or dry white wine
-½ tsp saffron
-50g parmesan, or vegetarian alternative, grated
-1 egg yolk
Preparation:
1.Heat the stock in a pan over a very low heat – have a ladle at the ready.
2.Melt the butter and olive oil in a high-sided, non-stick frying pan.
3.Add the onion and a large pinch of salt, then cook, stirring, for 5 mins until softened and fragrant but not colouring.
4.Tip in the rice and coat in the oil and butter, cooking for a few mins until beginning to toast.
5.Pour in the wine and cook, stirring, until it’s absorbed.
6.Add the saffron and begin to add the stock, a ladle at a time, stirring continually.
7.Add more stock as it’s absorbed.
8.After 25-30 mins, all the stock should be absorbed and the rice should be creamy and al dente.
9.Add the Parmesan and stir until melted. Turn off the heat and stir in the egg yolk.
