Spinach-Chiken Scrambled Eggs
Ingredients:
-1 large eggs
-1 large egg whites
-1/8 teaspoon salt
-1/8 teaspoon pepper
-1 teaspoon butter
-1/2 cup thinly sliced chicken
-1/2 cup fresh baby spinach
-1/2 chopped tomato
-1/2 SMOKED CHICKEN BREAST,chopped
-2 tablespoons sweet corn
DIRECTIONS
1.In a small bowl whisk eggs, egg whites, salt and pepper until blended.
2.In a nonstick skillet, heat butter over medium-high heat.
3.Add tomato; cook and stir 2 minutes.
4.Add chicken and stir 3 minutes.
5.Add spinach; cook and stir until wilted.
6.Reduce heat to medium.
7.Add egg mixture; cook and stir just until eggs are thickened and no liquid egg remains.
Caprese Baguette Sandwich
Ingredients:
-1 Baguette large, fresh
-2 tbsp Basil pesto
-1 pkg Fresh Mozzarella Cheese sliced
-1Tomato sliced
-2 tbsp Balsamic vinegar
DIRECTIONS
1.Slice baguette in half and then into fourths.
2.Spread about an ounce or 2 tablespoons of pesto onto one side of the baguette.
3.Top with 1/4 of the mozzarella and 2-4 slices of tomatoes.
4.Drizzle the sandwich with balsamic vinegar and crown with the other side of the baguette.
5.Serve Immediately.
Cheesy Avocado Quesadillas
Ingredients:
-1/2 of avocado,sliced
-1/2 Cup Chedar Cheese, shredded
-1 Spelt Tortilla
-1/2 tomato
-1 spoon of cream cheese
DIRECTIONS
1. Place a tortilla in a large saute pan over medium-high heat.
2. Cover with half of the cheese and top with the avocado slices and add tomato.
3. Cover with cream cheese and tortilla, slightly pressing down.
4. Cook in the saute pan for 4 minutes total, turning halfway through.
5. Cut into wedges and serve.
Semolina with Banana,White Bueno and White Lion
Method:
-Combine milk, water, butter, and sugar in a saucepan over medium-high heat.
- Pour in semolina flour in a steady stream, whisking constantly to prevent lumps.
- Add banana, white bueno and white lion
Toast with Cream Cheese, Raspberries and with Oreo
Ingredients:
- 1 large slice of sandwich bread
- 1 tablespoon cream cheese (Philadelphia )
- Freshly ground oreo
- Rasspberries
DIRECTIONS
1. Preheat oven to 200°C. Toast bread slice until golden brown, about 2 minutes. Take out of the oven and cool completely. Alternatively, you can use toaster.
2. Combine cream cheese
3. Spread cream cheese mixture onto cooled bread slice.
4. Top with raspberries and oreo. Serve with milk.
Bread with Egg and Cucumber

Bring enough water to the boil in a small pot to completely cover an egg. Once at a rolling boil, carefully add an egg with a spoon and set a timer for 4 minutes.

In the meantime, toast slice of toast in toaster.

Wash and very thinly slice cucumber with a mandoline. If you don't have a mandoline just cut very thin rounds of cucumber to cover the toast.

Remove egg from boiling water when timer goes off and immediately let cold water run over it just until it's not too hot anymore to touch.

Assemble toasts by adding cream cheese,for first add egg and for second add sliced cucumber.

Sprinkle with salt and pepper, drizzle with olive oil and enjoy!
Avocado Toasts
INGREDIENTS:

2 slices bread (can use gluten-free bread)

2 tablespoons cream cheese

1 large ripe avocado

DIRECTIONS:

Toast the bread. Spread cream cheese evenly on slices of bread.

Slice the avocado and place slices on top. Sprinkle with salt and eat immediately.
Overnight Oats and Greek Yogurt Parfait with Berries
Ingredients:
- 1 container of Greek yogurt
- ½ cup oats
- ½ cup fresh or frozen berries
Directions:

Use a glass jar.

Add yogurt.

Add some berries, for a thin layer.
-
Next, add oats. Top with yogurt and more berries.

Close jar tightly and leave in fridge for at least 6 hours or overnight.

In the morning, open jar, toss in nuts, eat up right away.

Optional you can add: chopped nuts and dried fruit.
