Smoky BBQ Cheese Burgers with Bourbon Caramelized Onions and Maple Bacon
Ingredients
-1 tablespoon butter
-1 1/2 lbs ground beef
-2 tablespoons bbq sauce
-1 garlic clove, grated on a microplane
-1 tablespoon shallot, finely minced
-1/2 teaspoon smoked paprika
-1 teaspoon sea salt
-1 teaspoon cracked black pepper

8 strips thick-cut smoked bacon
2 tablespoons maple syrup
Onions
1 tablespoon butter
2 large red onions, sliced into thin half-moons
2 tablespoons bourbon

To build
-4 brioche burger buns
-100 grams cheese
-cup of arugula
-1/4 cup prepared mayo
Steps
1.Perhap the oven 200C.
2.Line a baking tray with parchment paper, and assemble the bacon strips in a single layer.
3.Baste the bacon with maple syrup and bake, turning halfway through, for 25 - 30 minutes, until crispy. Transfer to a plate in a single layer to candy.
4.Prepare onions.Heat a large saucepan over medium-heat, and melt the butter and olive oil together.Add the onions to the pan, toss together with the butter, and season with a pinch of salt. Cover and cook, stirring a few times, for 20 minutes.
5.Pour in the bourbon, and scrape the delicious bits from the bottom of the pan into the onions.Transfer to a dish and set aside.
6.In a mixing bowl, combine the ground beef, bbq sauce, smoked paprika, garlic, and shallots, and mix well.
7.Divide into four portions and shape into burger patties, slightly larger than the width of your brioche buns.
8.Season each side of the patties with salt and pepper.
9.Heat a large pan over medium-heat add the burgers and fry for 4 - 5 minutes per side. When there is about 1 minute of cooking time remaining, top each burger with cheese and cover to melt.
10.Build the burgers with the bun 2 slices of bacon, caramelized onions, a handful of arugula, beef fried and 1 tablespoon of mayo.

Homemade Burgers
- 4 burger buns
- 500g good-quality beef mince
- 1 onion
- 2 tomatoes
- ruccola
- ketchup, hamburger sauce and mayo
- 4 slices of cheese
- 4 sun-dried tomatoes
- 1 cucumber
Spicy Beef Burger
Method
1. In a large bowl, mix together the mince, garlic, tomato ketchup, mustard, egg, chilli and onion.
2. Just before cooking, add the spring onions and basil to the mixture and divide into four patties.
3. Heat a little olive oil in a large non-stick frying pan and fry the burgers.
4. Turn them once only, cooking for about 5–6 minutes on each side.
5. Serve with burger buns and potatoes fries.

- 1 tsp mustard
- 1 free-range egg, lightly beaten
- 1 red chilli, finely chopped
- 1 small onion, finely chopped
- 2 spring onions, thinly sliced
handful fresh basil leaves, chopped
- olive oil, for frying

Ingredients
- 500 gr ground beef, split -into 4 patties
- Burger buns
- Fresh tomato
- Fresh lettuce
- Red onion, sliced thin
- American cheese
- Salt and pepper
Burger Sauce:
- cup mayonnaise
- 1 tablespoon ketchup
- 1tablespoon sweet pickle relish
Steps
1. For the burger sauce, whisk the sauce ingredients together and store in the fridge until needed.
2. Divide ground beef into 4 thin patties. They should be thin, so they cook quickly.
3. In a large skillet or on a griddle over medium-high heat, add a drizzle of neutral oil and add the beef patties. Press down on patties gently, so they form a crust on the bottom. Cook for about 3 minutes. Season patties with salt and pepper.
4. Flip patties and cook for another 2-3 minutes to finish cooking patties. Top each patty with American cheese.
5. To assemble burgers, toast the buns and smear a big spoonful of burger sauce on the bottom bun. Top with tomato, lettuce, one cheese slice, a slice of onion, a second patty, and the bun topper.
